Lasagna Rollups

Just remembered I never posted the recipe or directions. Sorry!!

*recipe makes about 40-50 rolls*

3-4 boxes of lasagna Noodles
24 oz crumbled feta
32 oz low fat cottage cheese
32 oz part skim ricotta cheese
1 cup shredded asiago cheese
1 cup shredded parmesan cheese
about 2 tsp black pepper
15 oz frozen chopped spinach - broken apart and leaves separated
about 2 cups marinara sauce
mozzarella cheese - enough to sprinkle on top

Mix feta, cottage cheese, ricotta, asiago, parmesan, and pepper in large bowl. Stir in spinach.

Cook lasagna noodles until flexible enough to roll but not completely cooked.
Place cooked noodles on clean work surface in single layer.
Spread 3 tbsp of filling down the middle (this is where it varies on how many you make. I tend to put a little more filling in.)
Roll noodles and place in greased baking dish.

Cover with marinara and top with cheese. Cover with foil. Bake 35-40 minutes or until center is hot and cheese is melted.

(if you want to freeze - after rolling, place rolls on a rimmed baking sheet and place in freezer for 30-45 minutes. Thank remove and place in ziploc. Thaw before baking.)

Ham and Cheese Pie

  • 3 large eggs
  • (1) 12 ounce can of evaporated milk - I used 12oz of half and half instead
  • 1/2 teaspoon of seasoned salt
  • 1/2 teaspoon of ground black pepper
  • 3/4 cup of baking mix
  • 8 ounce package diced ham - I cut up ham instead of packaged
  • 1 1/2 cups shredded sharp cheddar cheese
Mix the eggs, evaporated milk, seasoned salt and ground black pepper until incorporated well. Add the baking mix and whisk in. Make sure you break up all the big chunks of the baking mix, but if a few little ones are lingering that'll be okay. Stir in the ham and cheese.

Spray the inside of a 2 1/2 quart crock pot very liberally with non-stick cooking spray. Make sure you get all the sides very well all the way up. Pour in the mixture. Cover the top of the crock pot with a couple of layers of paper towels and secure with lid. Turn to low and cook on low for 2 - 4 hours.

Look for the edges to start turning golden brown and pulling away from the sides of the crockery and wooden skewer comes out clean. Turn off and remove crockery when you can and let sit for about 30 minutes. Then flip over onto a plate.

*Even though it calls for a 2 1/2qt crockpot, I'm guessing you could cook it in the oven. Probably put it at 275* and just test it with a toothpick to see it.

Garbage Casserole

1 lb hamburger
Medium size shell noodles
Family size can of Cream of Mushroom soup
1/2 - 1 cup sour cream
Couple dashes of Worcestershire Sauce
Cheddar Cheese - use preference on how much

Brown hamburger with seasoning (what ever your family likes, I used garlic powder and Johnny's.)
Cook noodles.

Mix ingredients together and place in casserole dish. Cover with cheese. Cook at 350 for 45-60 minutes or until cheese is melted.

From frozen - thaw and follow above directions.
