Meatball Stir-Fry Casserole

Ingredients:

  • 18 oz. pkg. frozen meatballs, thawed
  • 16 oz. pkg. frozen peppers and onions stir fry mixture, thawed (I used a Costco vegetable mix, which is why it is so weird)
  • 2 cups chunky pasta sauce
  • 2 cup shredded Mozzarella cheese
  • 1 cup grated Parmesan cheese

Preparation:

Preheat oven to 350 degrees. Combine meatballs, pepper and onion mixture and pasta sauce in 2 quart glass baking dish and stir well to combine. Top with cheeses. Bake at 350 degrees for 25-30 minutes or until casserole is bubbling and cheese is melted. Serves 6

From Frozen:

Defrost. Preheat oven to 350 degrees. Place meatball and vegetable mixture in a casserole dish. Top with cheese mixture. Bake uncovered for approx. 45 minutes.

French Dip

Roast Beef
Sandwich Rolls
au jus dip
Horseradish sauce

Prepare your au jus dip as directed on package. Then warm your meat in your au jus dip on the stove. Toast your rolls so they are nice and crispy, and then spread some horseradish sauce on it. Then pull your meat(one sandwich at a time-to ensure that your meat stays warm!)out of the au jus and place on your roll. Once all your sandwiches are done, spoon out your au jus dip into bowls, and dip your sandwiches into the au jus as you eat.(Like I need to tell you that!)

Cincinnati Chili

Cincinnati Chili

Mix 1 package of Cincinatti Chili seasoning with 6 Cups water and 1 6 oz. can tomato paste. Stir in 1-1.5 pound of ground beef (not browned). Stir together with fork. Bring to a boil. Simmer at low heat for an hour and a half to two hours.

Serve over cooked spaghetti. Top with sour cream, cheddar cheese, onions or kidney beans. (Known as two-way, three-way, or four-way if you are actually in Cincinnati). Also can be served over hot dogs in buns with same toppings.

Frozen Mamas: chili is all cooked. I would re-heat in my crock pot all day.

Potato and Double Corn Chowder

1 bag (16 ounces) frozen hash brown potatoes, thawed (4 cups)
1 can (15.25 ounces) whole kernel corn, undrained
1 can (14.75 ounces) cream-style corn
1 can (12 ounces) fat-free evaporated milk
1 medium onion, chopped (1/2 cup)
5-6 slices bacon, cooked and crumbled
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
In 3- to 4-quart slow cooker, mix all ingredients.
Cover; cook on Low heat setting 6 to 8 hours (or High heat setting 3 to 4 hours) to develop flavors.

Options: Sprinkle with cheese when ready to serve or serve with grilled sandwiches.

Cheesy Black Bean Sliders

One 15 1/2-ounce can black beans, drained and rinsed
1 pound lean ground beef (90% lean or higher)
1 large egg, beaten
1 cup preshredded reduced-fat Cheddar cheese
1/3 cup seasoned bread crumbs
1/2 teaspoon garlic powder
mini hamburger buns

Directions
1.Preheat the grill or frying pan to high then lower to medium heat.
2.Place the black beans in a large bowl and mash with the back of a large spoon until smooth but still a bit chunky. Add the beef, egg, cheese, bread crumbs, and garlic powder and mix until well combined.
3.Divide the beef mixture and shape into patties. Place the patties on the grill (or stove top frying pan) and cook until no longer pink inside and an instant-read thermometer registers at least 160°F, about 4 minutes per side.
4.Serve on hamburger buns with your favorite toppings and condiments.

FROZEN MAMAS:
Bag 1 - flash frozen meat patties.  Muffin tins work great for this! Press the raw meat mixture into the tin, so it fills about 1/2 to 2/3 of each cup then freeze for several hours. Dip the bottom of the tin in hot water to loosen the patties, then store them in a ziplock bag.
Bag 2 - buns
Thaw patties and buns and cook as directed above, you could probably cook these without thawing, just increase cooking time. I used panko bread crumbs and regular cheese. The best place to buy the mini buns is at Business Costco.

Apple Pork Chops with Stuffing

3 large unpeeled apples
4 pork chops
3/4 c sugar
2 T flour
1 t cinnamon
1/2 t salt

Cut apples into fourths and remove cores. Cut apples crosswise in half. Layer apples in crockpot. Coat chops with sugar mixture. Place pork on apples and sprinkle with remaining sugar mixture. Cook on low 8 to 9 hours.

FROZEN MAMAS: Thaw chops and apples. Place apples in crock pot, coat chops with sugar mix (small bag), place chops on apples and sprinkle remaining sugar mixture over all. Cook on low 8-9 hours. Prepare stuffing according to package. Serve togehter.
