Roma Pasta

Ingredients
Whole wheat spaghetti
Oven-dried tomatoes
Artichoke hearts
Chicken

Directions
Defrost chicken and sauce. Heat sauce up slowly. Take chicken out of marinade, discard marinade. Saute chicken in a pan (no need to oil or butter the pan first) over medium high heat until browned on both sides and cooked through. Keep whole or cut into big chunks and add to sauce. Meanwhile, cook spaghetti noodles according to directions. Combine noodles, sauce and chicken, and eat.

Slow-Cooker Bacon-Ranch Chicken and Pasta

        Ingredients:
1  lb chicken breasts - I used at least 1.5 lbs.
6  slices bacon, cooked and diced - I used 3 
2 to 3 cloves garlic, finely chopped
1  package (1 oz) ranch dressing and seasoning mix
1  can (10.75 oz) condensed cream of chicken soup
1  cup sour cream
1/2  teaspoon pepper
1/2  cup water
8 oz. spaghetti, cooked - I used 14 0z. penne

Directions:
1. Spray 4-quart slow cooker with cooking spray; place chicken breasts in cooker.
2.  In medium bowl, mix remaining ingredients except spaghetti. Pour over top of chicken.
3.  Cover; cook on Low heat setting 6 hours or on High heat setting 3 to 4 hours.
4.  When about 15 minutes are left, cook and drain spaghetti as directed on package.
5.  Just before serving, shred chicken with 2 forks, and toss creamy chicken mixture with cooked spaghetti.

Frozen Mamas:
Thaw the chicken mixture, put in crockpot and follow direction 3-5 above.  Feel free to spray the crockpot first, but you might not have to.  I gave more pasta than the recipe called for, so you may use it stretch out the meal or use about half the bag according to the recipe.

Toasted ravioli

Oven Toasted Ravioli

12 round frozen ravioli, thawed

1 egg

1 Tbsp milk

6 Tbps Italian bread crumbs

2 Tbsp grated parmesan cheese

cooking spray


Preheat oven to 375 degrees.


Whisk together egg and milk in shallow bowl.  In another bowl or pie plate, combine bread crumbs and parmesan cheese.  Dip ravioli in egg and then in bread crumbs.  Place on baking sheet.  Repeat until all ravioli are coated.  Spray ravioli with cooking spray.  


Bake for 12-15 minutes or until golden brown.  Serve with marinara.  


Frozen mamas: thaw, dip ravioli in egge and milk mixture then drop in bread crumbs and cheese mixture...bake as instructed above.

Red and White Ravioli


  • Ingredients:

  • frozen spinach and cheese ravioli, uncooked
  • 28 oz. jar spaghetti sauce
  • 12 oz. jar Alfredo four cheese sauce
  • 1-1/2 cups shredded mozzarella cheese
  • ~20 meatballs
  • Spice packet

  • Preparation:


    Preheat oven to 350 degrees F. In 3 quart glass baking dish, mix ravioli, spaghetti sauce and meatballs. Make sure all ravioli is coated with sauce. Drop Alfredo cheese sauce by spoonfuls over casserole. Sprinkle with mozzarella cheese and spice packet. Cover tightly with foil and bake at 350 degrees for 1 hour. Uncover and bake 10 minutes longer, until ravioli is tender. Serves 8

    Frozen instructions:

    Defrost both ziploc bags in refrigerator. Spread sauce bag, ravioli and meatballs in casserole dish. Spread cheese and spice packet on top. Follow heating instructions above.

    Mac and cheese

    8oz dry noodles
    5T butter
    6T flour
    3c milk
    1/2t nutmeg
    1 1/2 c cheddar cheese
    Breadcrumbs

    Cook noodles, mix with a little butter to keep from sticking. Set aside. Melt 5T butter, add flour, heat for 30 sed. Add milk and whisk until it thickens. Add nutmeg, salt and pepper, reduce heat and simmer. Add cheese and stir until melted. Toss cheese sauce with noodles, pour into 9x13 pan then sprinkle with breadcrumbs.

    If frozen, thaw then bake at 350 for 45 min.

    Baked Ziti



    Ingredients:

    1 lb. Penne or Ziti pasta
    2 c. Ricotta cheese
    2 c. Mozzarella cheese, shredded
    1/2 c. Parmesan cheese, shredded or grated
    4 c. Marinara sauce
    1/2 tsp. Salt
    1 tsp. Garlic powder
    1 1/2 tsp. Dried basil
    1/4 tsp. Red pepper flakes
    1/4 tsp. Black pepper

    Boil pasta a couple of minutes shorter than package instructions. Combine ricotta, 1 cup mozzarella, 1/4 cup parmesan, 2 cups sauce, and all seasonings. Add cooked pasta to cheese and sauce mixture and place in a greased 9 x 13 baking pan. Pour 2 cups of marinara sauce and sprinkle 1 cup mozzarella and 1/4 cup parmesan on top. Cover and bake at 375 degrees for 30 minutes, uncover and bake at least 15 more minutes until cheese is bubbly.

    Frozen Mamas:

    Thaw casserole and remove plastic wrap from covering, re-cover with foil. Cover and bake at 375 degrees for 30 minutes, uncover and bake at least 15 more minutes until cheese is bubbly.

    Chicken Marsala

    Ingredients:
    8 tbs butter
    4 tbs oil
    2 cups mushrooms(sliced)
    1 cup Marsala wine
    1 cup chicken broth
    2 cloves garlic
    4 chicken breasts, cut in half, about 3 pounds.
    Garlic pepper, to taste
    1 box of angel hair pasta (I used spaghetti)

    Assembly:
    Mix butter, oil, garlic and mushrooms in the bottom of a sauce pan. Cook until mushrooms are browned. Add the remaining ingredients, minus the chicken, into the pan and cook until boiled. Because of the wine, be sure to boil for at least 10 minutes to cook out alcohol taste.

    In a deep baking dish spray bottom of pan with cooking spray. Place half pieces of chicken breasts in pan. Sprinkle with garlic pepper. Pour sauce over chicken.

    From frozen:
    Thaw in the refrigerator overnight.
    In a deep baking dish spray bottom of pan with cooking spray. Cut chicken in half and place in pan. Pour sauce over chicken. Cook at 350 degrees for 35-45 minutes. Check thickest portion of chicken to be sure it is done. Prepare pasta as directed. Serve chicken and sauce over the pasta.

    Lemon Chicken Pasta

    Ingredients
    • 3 whole Grilled Chicken Breasts, Sliced
    • 1 pound Penne Pasta, Cooked Until Al Dente
    • ½ sticks Butter
    • 3 whole Lemons, Juiced
    • ¾ cups Heavy Cream
    • ¼ cups Half-and-half
    • 1-½ cup Grated Parmesan Cheese (or Romano)
    • Salt And Freshly Ground Black Pepper, To Taste
    • 20 whole Basil Leaves, Chopped

    Preparation Instructions

    Cook pasta, reserving 1 cup of hot pasta water when you drain. Set pasta aside in a colander.

    In the same pot, melt butter over medium heat. Squeeze in the juice of 3 to 4 lemons. Whisk together. Pour in cream and half-and-heat. Whisk until hot. Dump in cheese and whisk until melted. Add salt and pepper. Check consistency, adding some of the hot pasta water to loosen the sauce if needed.

    Pour pasta and sauce into a large serving bowl. Sprinkle remaining basil all over the top, then add sliced chicken breasts. Serve immediately!

    Directions from frozen

    Defrost completely, flipping the bag of chicken occasionally so the marinade gets throughout the chicken. Grill the chicken, discarding the marinade. I suppose it would work to bake it, but it tasted really good grilled. Slice into strips.

    In the midst of that, cook the pasta. I cooked the whole bag and while it looked like there was barely any sauce it was pretty flavorful. But if you want the sauce to be more obvious, cook 3/4 or so of the pasta.

    Also at the same time, heat the milk and cheese mixture in a saute pan. Once hot, whisk in the lemon and basil mixture. Nothing curdled when I made it, but whisk occasionally to make sure.

    Combine the sauce with the pasta and sliced chicken on top.

    Chicken Primavera Pasta

    2 chicken breasts cut in bite size pieces
    Chopped broccoli and carrots
    1 tub Philadelphia Italian cheese and herb cooking creme
    2 cups hot cooked pasta

    Cook chicken until done. Add vegetables until heated through. Add cooking creme, stir until heated through. Stir in cooked pasta. Serve

    From frozen: Thaw chicken and vegetables. Follow above instructions.

    Grown-up Mac n' Cheese

    I will have to come back here to post the recipe, but here are the instructions from frozen:

    Defrost in a casserole dish. Spread bread crumbs over top. Bake at 350 degrees for 30 - 45 minutes until brown and bubbly.

    Red and White Tortellini

    • Ingredients:


    • 2 (10 oz.) pkgs. refrigerated or frozen cheese tortellini, uncooked
    • 28 oz. jar spaghetti sauce
    • 12 oz. jar Alfredo four cheese sauce
    • 1-1/2 cups shredded mozzarella cheese
    • ~20 meatballs

    • Preparation:


      Preheat oven to 350 degrees F. In 3 quart glass baking dish, mix tortellini, spaghetti sauce and meatballs. Make sure all tortellini is coated with sauce. Drop Alfredo cheese sauce by spoonfuls over casserole. Sprinkle with mozzarella cheese. Cover tightly with foil and bake at 350 degrees for 1 hour. Uncover and bake 10 minutes longer, until tortellini is tender. Serves 8

      Frozen instructions:

      Defrost in refrigerator. Spread red sauce, tortellini and meatballs in casserole dish. Spread white sauce and cheese on top (doesn't have to be perfect). Follow heating instructions above.

      Bacon and Prawn Macaroni and Cheese

      Ingredients

      • 7 ounces macaroni or penne pasta
      • 10 slices bacon, chopped
      • 15-20 of cooked prawns, tails off
      • 1 yellow onion, minced
      • 1/4 cup butter
      • 3 tablespoons all-purpose flour
      • 2 cups milk
      • 1 (8 ounce) package cream cheese
      • 1/2 teaspoon salt
      • 1/2 teaspoon black pepper
      • 2 teaspoons Dijon mustard
      • 2 cups shredded Cheddar cheese
      • 1 cup dry bread crumbs
      • 2 tablespoons butter
      • 2 tablespoons chopped fresh parsley

      • Directions
      1. Preheat oven to 400 degrees F (200 degrees C).
      2. Cook bacon and chop it, set aside
      3. Bring a large pot of lightly salted water to a boil. Add macaroni pasta and cook for 8 to 10 minutes or until al dente; drain.
      4. In a 3 quart saucepan over medium heat, cook onion until transparent, about 10 minutes. Add butter and cook until melted. Stir in flour. Cook for about 1 minute, until smooth and bubbly; stirring occasionally. Mix in milk, cream cheese, salt, pepper, and Dijon mustard. Continue cooking until sauce is thickened. Add cooked macaroni, cooked bacon, cooked prawns and Cheddar cheese.
      5. Pour into 2 quart casserole dish. In small bowl mix together bread crumbs, butter and parsley; spread over macaroni and cheese. Bake for 15 to 20 minutes or until golden brown and heated through.

      Frozen Directions
      Defrost. Bake uncovered at 400 degrees for about 30 minutes or until golden brown and heated through.
